Forte Nero

Red Wine Vinegar

Forte Nero is an intense red wine vinegar made from exceptional Istrian red wine. With its strong note and deep character, this vinegar is ideal for use in meat marinades, warm-cold appetizers, sauces for dark meats, or grilled dishes. Its strength and complexity add expressiveness and richness of flavor to the dish.

Leggero

Refreshing wine vinegar made from Istrian Malvasia wine. Light white wine vinegar Leggero offers a refreshing note of Istrian Malvasia. Gentle yet distinctive, this vinegar is a perfect addition to salads, marinades, or sauces. Its freshness enhances the flavors of fresh vegetables such as tomatoes and cucumbers and pairs beautifully with light dishes such as fish, seafood salads, or chicken dishes. Story about Nota and music

Nota is the first Istrian collection of wine vinegar, inspired by authentic gastronomy and composed according to the principles of the fascinating Istrian heritage – all to let the user’s senses dance in harmony between music and flavors. Crafted from native Istrian grape varieties, they mirror the character and richness of this region. The name itself, Nota, is inspired by the fact that vinegar gives the final touch to a dish. Depending on its intensity, Nota vinegar is available in three flavors on the market: leggero, andante, and forte. To illustrate the strength and character of flavors typical for the Istrian region to users even before tasting, we designed the label with the help of the renowned musician Tamara Obrovac, who has dedicated her entire life to preserving Istrian traditions through music and composed music specifically for these labels.

Tamara is one of the most significant and versatile personalities in the Croatian music scene. Her ethno-inspired contemporary Mediterranean jazz is influenced by the unique musical and dialectal traditions of Istria. She has received numerous national and international awards, including a nomination for the BBC Radio World Music Awards. The recording of the original miniatures is the result of Tamara’s tasting, and by scanning the QR code, it leads to a sound recording. Thus, Nota becomes the world’s first vinegar whose taste can be experienced even before tasting, providing a multisensory experience in enjoying an authentic Istrian product. Ivan Catalano, of Sicilian origin, has been calling Novigrad his home for 25 years, representing more than half of his life journey. From managing restaurants to overseeing a tourist agency, construction company, and real estate agency, his entrepreneurial spirit has navigated through various sectors. However, amidst a bustling career, he found solace in his personal refuge, an estate he acquired to create a peaceful oasis for his family and himself, dedicating time to his hobby of vinegar production.

With the support of friends and partners, Ivan decided to share this oasis with others. His passion for art, elegance, and enjoyment is reflected in Tenuta Tre Terre, his estate envisioned as a canvas for these values.
And his enthusiasm for vinegar production is gradually transforming into a sophisticated Istrian tale of gastronomy and tradition.
